Rakhi celebrations call for something sweet, but that doesn’t mean you need to spend hours in the kitchen. From chocolate-coated trail mix clusters to bite-sized date ladoos, these no-bake Rakhi desserts are quick to assemble, require minimal cooking and are perfect for sharing with family. Most of the recipes come together in around 20 minutes, making them ideal for a fuss-free festive treat.
Trail Mix Chocolate Clusters
Crunchy nuts, dried fruits and seeds come together with dark chocolate in these easy, no-bake clusters. They’re quick to prepare and can be customised with your favourite trail mix ingredients.
Ingredients
10 g dried cranberries
10 g almonds
10 g cashews
10 g dried blueberries
10 g sunflower seeds
10 g pumpkin seeds
10 g blackcurrants
80 g dark chocolate (70% recommended)
A pinch of sea salt (optional)
Method
Lightly crush one-third of the trail mix using a rolling pin or mortar and pestle. Keep it coarse rather than turning it into a powder.
Combine the crushed trail mix with the remaining whole trail mix in a bowl.
Chop the dark chocolate and melt it gently using a double boiler. Heat in short bursts and stir between each interval.
Pour the melted chocolate over the trail mix and mix well until everything is evenly coated.
Spoon small clusters onto a parchment-lined plate or tray.
Sprinkle a pinch of sea salt on top, if using.
Allow the clusters to set at room temperature or refrigerate for 10–15 minutes until firm.
Apricot, Date & Coconut Bites
Naturally sweet dates and dried apricots are combined with nuts, coconut, chia seeds and cardamom to create these soft, bite-sized treats. No baking is required.
Ingredients
½ cup dried apricots
½ cup pitted dates
½ cup almonds
¼ cup walnuts
2 tbsp desiccated coconut
1 tbsp chia seeds
½ tsp cardamom powder
Method
If the apricots and dates are very firm, soak them in warm water for 5–10 minutes. Drain well.
Pulse the almonds and walnuts until finely chopped.
Add the apricots, dates, coconut, chia seeds and cardamom powder.
Blend until the mixture forms a sticky dough.
Roll the mixture into bite-sized balls and coat lightly with desiccated coconut.
Cranberry & Pistachio Date Rolls
These date rolls combine the richness of pistachios and almonds with the tartness of dried cranberries. Slice them into small rounds for an elegant addition to your Rakhi dessert spread.
Ingredients
1 cup pitted dates
¼ cup dried cranberries
½ cup pistachios
¼ cup almonds
1 tbsp sunflower seeds
½ tsp cinnamon
1 tsp ghee
Method
Roast the pistachios, almonds and sunflower seeds until lightly toasted.
Pulse them coarsely.
Blend the dates separately until they form a smooth, sticky paste.
Mix the date paste with the cranberries, roasted nuts, seeds and cinnamon.
Shape the mixture into a log, wrap it in parchment paper and refrigerate for 30 minutes.
Slice into small rounds.
Tip: Cut the rolls into pinwheel-style slices for a more festive presentation.
Trail Mix Date Ladoo
Give the traditional ladoo a modern twist with dates, nuts, dried berries and seeds. These no-bake ladoos are naturally sweet and come together with just a few simple steps.
Ingredients
20 g dried cranberries
20 g almonds
20 g cashews
15 g dried blueberries
15 g sunflower seeds
15 g pumpkin seeds
10 g blackcurrants
8 soft dates, deseeded
1 tbsp ghee
1–2 tbsp warm milk (optional, if needed)
A pinch of salt (optional)
Method
Roughly chop the almonds and cashews. Combine them with the dried cranberries, dried blueberries, sunflower seeds, pumpkin seeds and blackcurrants.
Add the trail mix to a dry pan and roast over low heat for 2–3 minutes, until aromatic.
Allow the mixture to cool completely, then pulse half of it into a coarse powder.
Add the dates to a blender and pulse until they form a sticky paste.
Add the powdered trail mix, remaining whole trail mix and ghee, then blend again until well combined.
If the mixture feels too dry, add 1–2 tablespoons of warm milk and mix until it binds.
Lightly grease your palms and roll the mixture into small ladoos.
